Warm Cauliflower salad with snap peas and french beans. Sounds mouth full, isn’t it? It’s not only mouthful it is also absolutely delicious and flavoursome.
I love salads and these days I am on cauliflower kick, I am trying to make as many salads as with cauliflower! 🙂
In India there are a lot of dishes with cauliflower such as Aloo Gobhi (potato and cauliflower stir fry), Stuffed Parathas (flatbreads) and many more, however I am not a big fan of most apart from the parathas. 😛
Anyway without getting verbose and off piste, I would like to share this incredible, simple, vegan and gluten free recipe packed with fresh flavours.
I absolutely love this warm cauliflower salad, you have to try this.
This is how you make this salad.
Ingredients:
Instructions:
Dry roast coriander seeds, fennel seeds, black peppercorns, put them in mortar with sumac and crush it roughly, keep it aside.
Heat 1 tsp butter and olive oil, add the steamed cauliflower and toss it well with salt and red chilli flakes. Keep it aside in a bowl.
In the same pan add some more olive oil and toss in the onions. Sauté for just a minute to get rid of the rawness. Place it in a cauliflower bowl.
Repeat the same for snap peas and french beans, place all of them in a bowl.
Make a simple vinaigrette of olive oil and lemon juice.
Add the spice powders, salt, fresh dill and vinaigrette. Toss the salad well and add the pistachios.
Serve this salads for brunch or as a side!
