I love creating fast, healthy and quick recipes for supper, this recipe surely is one of them. I love mixing flavours from different cuisine to create new dishes and that happens often when I am cleaning out the fridge. 😉
A few days ago I made these juicy and delicious lamb chops for S and I served it with couscous salad. It was a complete meal and quite low in calories.
If you don’t eat lamb then substitute it with chicken tender fillets, they take just 5 minutes to cook.
Here is how you make it.
Serves 2
Ingredients:
- 120 g or 2 lamb chops
- 4 garlic cloves
- 1 tbsp rosemary chopped
- 2 tbsp fresh coriander chopped
- 2 tsp whole black peppercorns
- 1 tsp turmeric powder
- 0.5 tbsp coriander seeds
- 0.5 tsp cumin seeds
- 1 tsp lemon juice
- 2 tbsp olive oil
Directions:
In pestle mortar make a coarse paste of turmeric powder, black peppercorns, coriander and cumin seeds, take it out. Keep it aside.
Make a coarse paste of garlic, coriander leaves and rosemary and add the spices, lemon juice to it.
Marinate the lamb chops in this paste for at least 15 minutes to half an hour.
Heat a grill pan or heavy bottom pan, add the olive oil and grill the marinated lamb chops for about 3-4 minutes on each side for medium-rare.
Let it stand for at least 5 minutes before serving.
Serve as is or with couscous salad.
