Couscous is a wonderful Italian pasta you can make it in a trice. In my house we eat couscous at least 2 times a week, well I don’t as I am off gluten but I serve my husband with grilled meat or fish.
However it can be very boring and bland at times at least for my husband if it’s not properly seasoned and paired with something.
I try to come up new combinations if I am not serving it with meat. I do like to serve it steamed or sautéed vegetables but my husband isn’t a great fan of eating vegetables, specially broccolini. I absolutely love broccolini and there are only few ways I can make my husband eat it. This is definitely one of them.
The bitterness of broccolini, chilli and butter goes really well with couscous.
If you don’t eat gluten then you can replace it to quinoa or buckwheat.

Add saffron, salt and butter to the couscous and cook the couscous according to the package instructions. But the way I cook is, 1 ⅛ cup boiling water to 1 cup couscous, cover it for 10-15 minutes, then fluff it using a fork.
Steam the broccolini or the blanch them. Keep it aside.
Heat oil, add in the onions, chilli and sauté for 2-3 minute. Add in the spring onions and broccolini, salt and pepper, toss it well and sauté for 2 minutes.
Garnish with radish or whatever you fancy.
Place this over the couscous and serve warm.
