Who says Vegan Food is boring and lacks flavours? I have a recipe for you which is completely vegan and it will knock your socks off!
Sri Lankan dishes in my opinion are very close to South Indian and South- East Asian Cuisine. When I tried a few dishes from this cuisine I absolutely loved them because of the most fragrant flavours, spices and of course ample use of fresh coconut.
Gotu Kola or in India it is known as Brahmi, is one of the most healthy herbs you can consume. It is widely used in Ayurveda, referred a s a brain tonic, cooling for stomach because of it’s astringent properties, also used for blood circulation and many other medical issues.
The original Sambol recipe calls for dried Maldive fish flakes but since I am allergic to it and I wanted to keep it vegan, I have omitted that from the recipe.
Eat this sambol as a salad or as a side with your meal and do give this recipe a try!

Mix all the ingredients well by hand to get all the juices out. Store it in the fridge.
Store it for up to 5 days, always serve cold.
