Banana, Candied Ginger And Walnuts Bread

Banana Bread is my absolute favourite quick bread to bake.

I am not sweet tooth but I love me some freshly baked breads sometimes with my tea or coffee and what’s more delicious than Banana Bread right? As much as I love it, quite often I get bored of the same combinations and I like to come up with something new and rather something out of the box.

A few days ago I was cleaning my pantry and I found some candied ginger I bought to make scones a few months ago. Well I never made scones for some reason but I though why not bake a bread using those.

I wasn’t very sure about the taste, the texture but I thought that candied element in the bread will be great which I have never had before. I also wanted to make the bread in a bit different way than usual, so I made it with golden syrup.  This banana bread came out perfectly moist and absolutely delicious, just the way I like it.

Candied ginger is such a wonderful and underused ingredient in baking, I haven’t seen many recipes using this. Whilst I was developing the recipe all these ingredients in my mind sounded wonderful. When the banana bread was baking in the oven, good lord the house was smelling heavenly.

Do give this recipe a try and I am sure you will love it.

Ingredients:

  • 150g self raising flour
  • 80g candied ginger chopped and soaked in hot water
  • 85g muscavado sugar
  • 85g golden syrup
  • 50g chopped walnuts
  • 2 bananas mashed
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ½ tsp cinnamon powder
  • ¼  tsp ginger powder
  • 75g unsalted butter
  • 1 egg

Instructions:

Preheat the oven to 180C/350F. Line a baking tin with a baking parchment and butter generously.

Mix flour with spice powders and salt.

Dice the candied ginger and add 5-6 tbsp boiling water to it, drain the water after 15 minutes keeping only 1 tsp of it.

Melt sugar, golden syrup and butter using bain marie method (double boiler). Add in the candied ginger with 1 tsp of water. Make sure the temperature is not too hot before adding banana, vanilla and beaten egg. Mix well.

Add flour to this mixture in 3 parts. Pour it in the lined pan and pour the chopped walnuts on the top.

Bake in the preheated oven between 40-50 minutes until the toothpick inserted in the centre comes out clean.

Serve warm with vanilla ice cream or tea or coffee.
