I was away for more than a month and my husband ate a lot of Indian food during that time, after coming back I asked him what special I can cook for me and he quickly replied anything but Indian.. 😛
So at 8 in the evening with whatever ingredients I had, I came up with this simple grilled chicken recipe and I served it with quinoa salad.
So let’s get to the recipe!
Ingredients for grilled chicken:
- 4 chicken leg pieces without skin
- 3 garlic cloves finely chopped
- 1 tsp fresh thyme chopped
- 1 tbsp grainy dijon mustard
- ½ tsp crushed black pepper
- ¼ tsp clove powder
- ½ tsp smoked paprika
- 1 tbsp tomato ketchup
- 1 tbsp butter
- 1 tsp olive oil
- Salt to taste
Instructions:
Mix all the ingredients of the marination, give a few gashes to the chicken. Marinate the chicken for at least 30 minutes up to 2 hours.
Grill the chicken in a preheated oven for 180C/350F for 15-20 minutes or until the chicken is browned and cooked.
Quinoa Salad Ingredients:
- ½ cup cooked quinoa
- 1 small onion small diced
- 1 cucumber diced
- 1 tomato small diced
- 1 green capsicum small diced
- 1 tbsp coriander finely chopped
- 1 tsp fresh mint finely chopped
- 1 chilli finely chopped
- ½ tsp or to taste black pepper
- 1 lime squeezed
- Salt to taste
- 1 tsp olive oil
Directions:
Mix quinoa with all the vegetables. In a bowl, add coriander, mint and lemon juice add oil slowly and whisk it to make a salad dressing.
Pour this dressing over the salad and add salt, pepper. Keep the salad in the fridge until you use it.
Place the grilled chicken over this salad and serve.
