This simple Banana Walnut bread is perfect for lunch boxes, for weekend brunch or just to have it with a cup of tea or coffee!

There is something so comforting about bananas in baking, the browner are the better in my opinion. This mushy, brown fruit makes the best, soft and moist bread ever however I do like a slight crunch in my breads so I like to add nuts to them.

To make this banana walnut bread more healthy and to give it more texture, I added some dates to it. Trust me this whole combination of dates, walnuts and banana is an absolute winner and it is delicious. I often serve this banana walnut bread warm with vanilla ice cream.

Banana Walnut Bread

Ingredients:

  • 200g plain flour
  • 1 tsp baking powder
  • 1 ½  tsp baking soda
  • 1 tsp ginger powder
  • 1 tsp cinnamon powder
  • 1 tsp coffee extract
  • ½ tsp salt
  • 150g chopped dates
  • 100g muscovado sugar  
  • 400g or 3 Bananas mashed
  • 3 eggs
  • 125g unsalted melted cold butter
  • 40g chopped walnuts

Instructions:

Preheat the oven on 180C/350F.

Line the baking tin with a baking parchment and butter it well. Mix the flour with baking powder, 1 tsp baking soda, salt and spice powders.

Add ½ tsp baking soda to the dates, pour boiling water over the dates. Strain it after 5 minutes and keep it in the fridge for 10 minutes.

Whisk eggs well. In a separate bowl, cream butter and sugar well. Add it to the eggs while whisking it. Add in the banana and dates, whisk well to combine. Add in the coffee extract, mix well.

Fold the flour in 3 parts without over mixing it. Pour the batter in the lined baking tin. Sprinkle the walnuts on the top.

You can divide the batter in 2 baking tins too. Bake it in the preheated oven for 45 minutes to 1 hour or a toothpick inserted in the centre comes out clean.

Cool on a wire rack for half an hour before cutting it.
